Ingredients:

  • 2 1/2 cups oats
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsweetened almond flour
  • 3/4 cup canned pumpkin
  • 2 eggs
  • 2 tbsp syrup (I suggest pure maple syrup)
  • 2 tbsp coconut oil, ghee or butter
  • 2 tsp apple cider vinegar
  • 1 1/2 tsp vanilla
  • 1 tsp pumpkin spice blend

Instructions

  1. Blend oats in blender until it is smooth/has a flour consistency.
  2. Add baking soda, baking powder and salt. Blend thoroughly
  3. Transfer mix into a bowl. Add the rest of the ingredients then mix thoroughly.
  4. Scoop pancake mix into desired shapes/sizes onto pan and cook on medium heat until golden brown on each side.
